EAST GREENBUSH – At Zachary’s Pastry Shoppe, it takes 19 pounds of butter to make a 15 gallon batch of buttercream frosting. This week, owner Dan Raymond (above) and his two-person staff in the bakery’s basement production kitchen filled five 55-gallon plastic barrels with frosting. This equates to approximately 350 pounds of butter for 275 gallons of frosting.

By mid-afternoon Friday, three of Zachary’s barrels were empty, with two more in reserve to frost the cakes and cupcakes needed to fill the nearly 100 orders placed Friday and Saturday, including for several holiday parties. high school and six marriages, plus more to stock the cash registers of the store, for those who neglected to order in advance.

“Cakes and cupcakes always seem to be left to the last minute,” said Raymond, who ran his bakery in Albany for five years, took a ten-year hiatus when his children were young and operated the reopened Zachary’s. , in a small strip mall on Routes 9 and 20, for 20 years. Mazzone Hospitality, based in Clifton Park, for example, ends the month with an average of 17 weddings during each of the June weekends from Friday to Sunday, as well as several weddings on Thursdays and six bar mitzvahs, according to Sean Willcoxon, manager of the restoration of Mazzone Hospitality. . The society also hosted a 5,000-person corporate event this month, Willcoxon said, and hosted an American Cancer Society gala for 600 people Friday night at Saratoga National Golf Club.

“The prices of everything are going up,” Raymond said, noting that the cost of one of the commercial baked goods he uses, sweetened egg yolks, has more than doubled in the past year.

“We have to charge more, but people seem to understand or they don’t care,” Raymond said. “Without restrictions for the first time in three years, they will celebrate.”
